I love the sauce to this pad thai dish, it is light yet full of flavor! I find that I always cook this dish when I have a craving for pad thai food. It is one of my husband’s go to dishes. Which is great because it is easy to make.

Now is the time to get to work chopping veggies! This dish isn’t difficult to make, it is just the broccoli, mushrooms and tomatoes that need to be chopped and diced. However, it is a good idea to put the sauce together before you start your saute. To make sauce combine soy sauce, chili garlic sauce, lemon, sesame oil and brown sugar. Just a few ingredients but it really brings the flavor to the dish!
Start the saute with the broccoli letting it cook over medium heat for 5 minutes and then add the mushrooms. Once they are fully cooked add the tomatoes.
Just place noodles in a bowl and pour Very Hot tap water over them. Stir and separate the noodles and let sit for 25-30 minutes. Don’t forget them and avoid over soaking!
Veggie Soy Pad Thai
6 TBL Soy Sauce
2-3 TBL Lemon Juice
3 tsp Sesame Oil
3 tsp Chili Garlic Sauce
6 TBL Brown Sugar
2 Bunches Broccoli Chopped
1 1/2 lb Baby Bella Mushrooms Chopped
2 Tomatoes Diced
1 Pad Thai Rice Noodles
First put the rice noodles into a bowl and cover with Very Hot water. Stir to separate and then let noodles soak 25-30 minutes. Don't over soak.
Next make the sauce in a bowl by combining the soy sauce, lemon juice, sesame oil, chili garlic sauce, and brown sugar. Set the sauce aside.
Next saute the chopped broccoli and mushrooms on medium heat. Once those are cooked 7-9 minutes add the tomatoes. Once combined add the rice noodles and the sauce. Let cook 2-3 minutes longer and serve!
