Vegetable Yellow Curry Over Rice

Am I the only one out there that is obsessed with Thai food?  When I moved to Oregon three years ago I had to give up the best Thai restaurant that was right down the street from us.  We tried finding a new restaurant here but since we live in a small town there is really not very many options.   Thank goodness I was able to create this easy Vegetable Yellow Curry Over Rice dish.

INGREDIENTS:

1/2 Onion

1 Zucchini

1 Orange Pepper

1/2 head Cauliflower

1/2 head Broccoli

1 Cup of Carrots, sliced

1 small container of mushrooms

1 Large Tablespoon Garlic

Pinch of Cayenne Pepper (Optional)

1 Can Coconut Milk

1 Bottle Yellow Curry Sauce (I like the Kikkoman brand but have used others with success)

2 Tables Sesame Oil

Dice up all the vegetables and set aside.

In a fry pan add the  Sesame Oil (Vegetable oil or Olive oil will work if that’s what you have).  I add the carrots first and give them 5 mins to cook before I add the cauliflower.  Let them cook for another 3-5 minutes.  Add the garlic. I then add the remaining vegetables Broccoli, Onion, Mushrooms, and Pepper.  I let the vegetables simmer another 5-7 minutes.  I want them to be just about cooked still having just a slight crunch.  I then add the Curry sauce and Coconut milk.  I mix the sauce in and yes its slightly soupy.  At this time you can add the Cayenne Pepper if you like it spicy! I let the sauce simmer for 10 minutes.

Once it is done I place it over Rice.  I spoon out some of the sauce and ad it onto the rice because it will give it an extra delicious flavor.  Jasmine Rice is our preferred rice to serve with this dish.  Or in a time crunch heat up some instant Quinoa & Brown Rice.  It tastes great too.
