Slow Cooker Shredded Chicken

So, I’m a vegetarian, but I cook a little bit of meat once in awhile for my husband. Slow Cooker Shredded Chicken is a great recipe for me because it is fast and easy and I can freeze the leftovers.

Get out the trusty slow cooker.  Combine mild green enchilada sauce with a low sodium taco seasoning packet.  I then place a whole chicken right into the sauce.  Cook on high 4-5 hours or on low 8-9 hours.

It is done when the chicken is falling off the bone.  I then pull it out and use 2 forks to shred the meat.  If I freeze it, I add some juice in with the meat.

With the meat you can make chicken tostadas that are to die for!  Layer your favorite crispy corn tortillas with lettuce, tomatoes, cheese and my Avocado Lime Pico on top.

Ingredients

  1. 1 can Green Chili Enchilada Sauce 28 oz

  2. 1 whole chicken

  3. 1 packet taco seasoning mix

Instructions
