Slow Cooker Roast Beef & Gravy

This is my favorite dinner when I forget to plan a meal!  I get up in the morning and remember that I haven’t planned anything for dinner and I’m going to be gone all day, so I take a roast out of the freezer and place it in the slow cooker along with 2 cans of beef broth, salt and pepper, and sage.  I turn it on high and leave the house.

When I get home in the evening, I take the roast out and place it on a cutting board to slightly cool.  While it’s cooling, I start peeling the potatoes and get them cooking on the stove.

I then trim off any fat and carve the roast into ¼ slices or thinner.

After straining the juices and beef broth into a 4-cup container, I place the sliced beef back into the slow cooker and pour about ½ of the juices and broth over the meat.  Turn the slow cooker back on to high while you mash the potatoes and make the gravy.

I use the remaining juices and broth instead of water and one brown gravy seasoning packet and cook according to the directions.  If I need more gravy, I just make up two gravy packets using the remaining juices and broth.  In no time at all, I have a meal the whole family can sit down and enjoy.

Ingredients

  1. 1 2 1/2 LB eye of the round beef roast

  2. 2 cans (14.5 oz.) beef broth

  3. 1 to 2 packets brown gravy

  4. Salt to taste

  5. Pepper to taste

  6. Sage to taste

Instructions

In the morning take a roast out of the freezer and place it in the slow cooker along with 2 cans of beef broth, salt and pepper, and sage. Turn it on high. Cook for 8 to 9 hours. If your roast is already thawed, cook on high 4 to 5 hours or until the meat is fork tender.
