Roasted Veggies

After a busy week of eating poorly, I start to crave veggies, especially Brussels sprouts and cauliflower.  This is my super simple go-to recipe for fresh veggies that not only tastes great, but makes me feel great.  I love just a bowl of roasted veggies with salad dressing drizzled on top, or I serve them to my family as a side dish (which even the picky veggie eaters love). You won’t believe the amounts of fresh veggies your family will consume in one meal. I can mix them with rice, noodles, or beans and make a full meal. They are so versatile and easy to make.

Preheat the oven to 425 degrees F. Chop the brussels sprouts in half, slice baby carrots and chop the cauliflower.  Place the veggies in a gallon baggie with 3 T. of olive oil. Shake the bag until all veggies are coated with olive oil. Spread the veggies on a large baking sheet.

Roast the veggies, stirring once, about 30-35 minutes. Test for doneness with a fork. Take out of oven and sprinkle Montreal Steak Seasoning to taste and feta cheese.

Options:

 Drizzle veggies with your favorite dressing or vinaigrette

 Roast your favorite veggies: broccoli, peppers, onions, etc.

 Mix veggies with a can of drained, rinsed black beans.

 Add veggies to your favorite rice dish.

 Mix veggies with Udon noodles and a little teriyaki sauce.

 Put roasted veggies on a platter topped with fresh mozzarella slices and put under the broiler until the cheese melts.

Ingredients

  1. 2 cups brussels spouts, cut in half

  2. 1 cup sliced baby carrots

  3. 2 cups cauliflower florets

  4. 3 Tbs olive oil

  5. 1 tsp montreal steak seasoning

  6. 1/2 cup feta cheese

Instructions
