Red, White & Blue Cheesecake Bites

Red, White & Blue Cheesecake Bites are so delicious! Don’t let the word “cheesecake” scare you from this recipe. These cheesecake bites are easy to make and no springform pan is needed.

Mix all of the crust ingredients in a food processor. Line a 9 x 13 pan with foil and spray with cooking spray. Spread the crust evenly into the pan and pat it down with your fingers or spoon.

Beat the cream cheese and sugar in a medium bowl with an electric mixer. Add the eggs one at a time, beating just until they are mixed. Add the vanilla and sour cream and mix again. Pour the mixture onto the crust.


Bake for 50 minutes. Turn off the oven ad open the door slightly for 15 minutes. Remove from oven and let it cool another 15 minutes. While the filling is cooling, mix together the sour cream topping. Turn the oven back on to 475°.


In a small bowl combine the sour cream, sugar, and vanilla. Spread over the top of the cheesecake and put back into the 475° oven and bake for 5 minutes. Remove from oven and cool completely.



Melt the red and blue candy wafers in separate bowls according to package directions. Scoop the melted wafers into separate Ziploc bags. Cut a small hole in the corner of the bags. Start in one corner of the pan and squeeze the bag with red candy wafers diagonally across the cheesecake. In the opposite direction do the same with the blue candy wafers. Chill in the fridge for at least 8 hours.


Remove from the fridge and grabbing opposite ends of the tinfoil pull the cheesecake out of the pan. Heat a knife under hot running water and cut a line in the cheesecake. Place the knife under the hot running water again and cut another line in the cheesecake. Repeat this step until you have cut the cheesecake into squares. The hot water will allow it to have a clean cut and won’t smear the cheesecake.

Crust

  1. 1 box Nilla Wafer Cookies 11 oz

  2. 2 Tbs. sugar

  3. 1 cube butter, melted

  4. 1 1/2 tsp. vanilla extract

Filling

  1. 3 packages cream cheese, softened 8 oz packages

  2. 1 1/3 cups sugar

  3. 4 eggs

  4. 1 1/2 tsp. vanilla exctract

  5. 1/2 cup sour cream

Sour Cream Topping

  1. 2 cups sour cream

  2. 1/3 cup sugar

  3. 1 tsp. vanilla extract

Red & Blue Topping

  1. 1/3 cup Red Candy Wafers

  2. 1/3 cup Blue Candy Wafers
