Gluten Free Coconut Cookies

This Gluten Free Coconut Cookie recipe is the ultimate gluten free treat. Trust me when I say that it will leave you wanting more! I bet that I am not the only who has had a hard time finding good gluten free recipes so I decided to make my own. These cookies are filled with flakey coconut goodness that will leave your mouth watering and wanting more. So start preheating your oven right now and make sure that you have plenty of milk to along with these cookies.

INGREDIENTS:
1 cup butter, softened
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon Vanilla
1 1/4 cup Flaked Coconut
1 cup coconut flour
1/2 teaspoon baking Soda
1/2 teaspoon baking powder
pinch of salt
STEP 1
Preheat oven to 350 Degrees
STEP 2

In a medium bowl combine flour, baking soda, baking powder and salt. Then add the coconut flakes and combine well. Add granulated sugar and brown sugar to the bowl and stir until everything is mixed well.
STEP 3

Add softened butter, egg and vanilla. Be sure to mix everything until a dough forms.
STEP 4


Drop tablespoon size balls of dough onto a baking sheet and then take a fork and push down on the dough. Place the cookies in the oven and bake for 8-10 minutes or until golden brown. Watch closely so that they don’t burn.
