Curry-Cheese Melts

I can’t decide if I like these mini curry-cheese melts just by themselves with fresh summer tomatoes, or in the fall with a steaming bowl of soup.  Either way, this is an easy way to rev up the flavors from an ordinary cheese melt to extraordinary.

Preheat oven to Broil.   Mix together olives, mayonnaise, black beans, green onions, cheddar cheese, mozzarella cheese, curry powder, and cumin in a bowl.

Slice the baguette into 1/2″ slices.  Generously spread the mixture on each slice and place on a cookie sheet.   Broil for 3 minutes.

Total Time 15 minutes

Ingredients

  1. 1 can chopped olives -small

  2. 1/4 cup mayonnaise

  3. 1/2 cup black beans -smashed

  4. 1/4 cup green onions -chopped

  5. 1/2 cup cheddar cheese -grated

  6. 1/4 cup mozzarella cheese -grated

  7. 1/4 tsp. curry powder

  8. 1.2 tsp. cumin

  9. 1 whole tomato -sliced

  10. 1 whole baguette -1/2" slices

Instructions

  1. Preheat oven to Broil.
