Mix together ranch dressing and sour cream.  Finely slice dill and slowly add it to your mixture.  We suggest adding 1 tsp to 1 tbsp depending on what you prefer.

Chop cauliflower into bite size pieces and set aside. Mix the milk/water/flour and spices in a medium mixing bowl. It should be the consistency of pancake batter. Dip the cauliflower in the batter and shake off excess batter.

In a small sauce pan heat Siracha, butter and soy sauce until warm.

This is where you choose if you want to bake or fry them.  I go back and forth on which one I prefer.  I am not going to lie, frying the cauliflower wings tastes amazing.  The baking option also tastes good and is healthier.  I guess it depends on if I am on a healthy kick or not.

TO FRY: Fill a Dutch oven pot with canola oil and preheat to 350°. Deep fry breaded cauliflower for 3-5 minutes or until golden. Remove cauliflower from oil and place directly onto a wire rack. Then toss in bowl with hot sauce. Toss until completely coated.

TO BAKE: Preheat oven to 450°. Lay the cauliflower single layer greased baking sheet. Bake for 20-25 min. or until crust is crispy and golden. Check the hot sauce. If you like it hotter, just add a little Sriracha at a time until desired taste. Brush hot sauce mixture over each cauliflower piece, repeating brushing until all the hot sauce mixture is used (or just toss it in a bowl). Put it back into the oven for about 10 minutes until cauliflower is browned.

Sprinkle with bleu cheese and chopped green onions.

Tips and suggestions:

-If you won’t be eating the wings right away, you can preserve the crunchy texture of the fried cauliflower by serving the hot sauce on the side next to the dip.

-If you are serving to large party, place the Ranch Dip in a small dish in the center of the cauliflower wings to hold the dip.  This way everyone can reach the dip.

-If serving for dinner, we like to give each person their own personal dipping bowl.
